Skyr Ice Cream

Skyr meets summer: this creamy ice cream recipe combines Icelandic freshness with fruity indulgence - perfect for hot days when you want to snack without any regrets. The basic recipe can be customized and sweetened with fruit, chocolate, nuts or even salty ingredients. And all with or without an ice cream maker.

Ingredients

Skyr ice cream basic recipe

  • 500 g Skyr natural
  • 200 ml cream or plant-based alternative (for more creaminess)
  • 2-3 tbsp honey, maple syrup, agave syrup or sweetener of your choice
  • 1 teaspoon vanilla extract (optional)
  • 1 pinch of salt

Optional for taste:

  • 100 g berries (pureed)
  • 1 ripe banana, mashed
  • Lemon zest or juice
  • 2 tbsp peanut butter or nut butter
  • 50 g dark chocolate, chopped
  • Cinnamon, cocoa, grated coconut - whatever you fancy!

Instructions

    Preparation without an ice cream maker

    1. mix all the ingredients well until a homogeneous mixture is formed.
    2. pour the mixture into a container suitable for freezing.
    3. stir well every 30-60 minutes with a fork or whisk to prevent large ice crystals from forming - for approx. 4-5 hours.
    4. allow to thaw for about 10 minutes before serving.

    Preparation with an ice cream maker

    Mix all the ingredients and process according to the ice cream maker instructions (approx. 20-30 mins)

    Ideas for variations

    Skyr strawberry ice cream: 300 g pureed strawberries + 1 tbsp lemon juice

    Skyr chocolate ice cream: 2 tbsp unsweetened cocoa + 50 g chocolate chips

    Skyr mango ice cream: 200 g mango puree + a little lime juice

    Skyr-Joghurette-Style: Erdbeeren + Schokosplitter + Minze
