Apple pancake

For more than 400 years, the Weiß family at the Romantik Hotel zur Post has been pampering their guests with culinary delights using traditional family recipes adapted to the times. Join us on a culinary journey through time and cook the delicious apple pancake according to the recipe of Fanny Weiß, the great-grandmother of today's host Ludwig Michael Weiß.

Ingredients

  • 110 g flour
  • 150 ml milk
  • 100 ml cream
  • 4-5 eggs
  • 1 pinch of salt
  • 1 pinch vanilla sugar
  • 20 g sultanas
  • 1 pinch cinnamon
  • 50 g sugar
  • 1 Apple
  • 1 spoon butter
  • 1 dash Grand Marnier
  • Icing sugar
  • Roasted flaked almonds

Instructions

  1. 1.
    Put the milk, cream, eggs, salt, vanilla sugar in a bowl and mix.
  2. 2.
    Place the milk, cream, eggs, salt and vanilla sugar in a bowl and whisk together.
  3. 3.
    Cut the apple into wedges and remove the core.
  4. 4.
    Melt a spoon full of butter in a pan, add sugar and the apple slices and caramelise until light brown. Then add a little cinnamon.
  5. 5.
    Now pour the batter into the pan and wait a few minutes. When the batter has slightly baked, you can spread the sultanas on top.
  6. 6.
    When the bottom of the Apfelschmarrn has a good colour, divide the dough in the middle and turn the two halves over. Put some melted butter and a good pinch of sugar on top, fold in the salamander until the apple pancake has a nice brown colour.

    Then shred the apple pancake with two spatulas and deglaze with Grand Marnier.
  8. 8.
    Arrange on a plate, dust with icing sugar and garnish with toasted almond flakes.
