Cheese Spaetzle
With Allgäu mountain cheese and onions. An original recipe for 4 people.

His cheese spaetzle is exactly that kind of dish. A dough that is stirred firmly until it reaches just the right consistency. Spaetzle scraped into boiling salted water, ready to be lifted the moment they float to the surface. Layers of melted Allgäu mountain cheese slowly binding everything together. On top, onions gently cooked in butter until soft and golden, finished with fresh chives. Just real, comforting food. Enjoy your meal – and have fun recreating it.

1.Mix the dough from flour, eggs, water, and salt for about 3 minutes using a machine. It should be thick and slightly sticky, but still just fall off the spoon. If the dough is too stiff, add a little more sparkling water and another egg.

2.Melt the butter and slowly sauté the onions in it until they become soft and translucent.

3.Press or scrape the spaetzle directly into boiling salted water using a spaetzle press or grater. Luggi’s tip: use plenty of salt. As soon as the spaetzle float to the surface, lift them out with a slotted spoon.

4.Layer the spaetzle in a large bowl: spaetzle, cheese, spaetzle, cheese – alternating in layers. Top with the onions, then finish with chives. Bring it straight to the table.
