Watermelon Feta Salad
Summer on your plate: fresh watermelon and feta salad. When the days are hot and you crave something light and refreshing, this salad is just the thing: watermelon meets feta, sweet meets salty—a true summer pairing! Fresh mint, a splash of lemon, and a dash of olive oil turn it into a little taste explosion that is wonderful as a starter, side dish for a barbecue, or light main course. Quick to make, wonderfully uncomplicated, and best served well chilled, it's a real hit on hot days.
Ingredients
Serves 2-4 people
- 1/2 watermelon, diced
- 200 g feta cheese, coarsely crumbled
- 1 small red onion, finely sliced into rings
- 1 handful of fresh mint (or basil)
- 2 tablespoons olive oil (preferably extra virgin)
- 1 tablespoon lime or lemon juice
- Freshly ground black pepper
- Optional: toasted pine nuts or a pinch of chili

Preparation
1. Place the watermelon cubes in a large bowl.
2. Sprinkle the onion rings, feta cheese, and mint on top.
3. Mix the olive oil and lemon juice and pour over the salad.
4. Mix gently and season with pepper to taste.
5. Top with pine nuts or chili as desired.
Tip:
Best served well chilled – ideal as a starter, side dish for barbecues, or light summer meal.
