Inspired by Remigio Dal Corso, the host and great lover of cuisine, the chefs Gianluca Vulcano and Emanuele Formica, Vasile Cucu and Loris Carraro use the finest produce from the countryside and the lagoon. The vegetables come from the Villa's organic garden or from the sandy, salty soil of the island of Sant'Erasmo. The seafood is caught in the lagoon and always prepared with great respect for its natural flavour. Try the spider crabs, the local "Moeche", which are caught after moulting and fried, or the "Schie", small lagoon prawns, which are enjoyed here together with the local slow-cooked white polenta.
The regional cuisine is based largely on rice and polenta, which can be sampled in the restaurant of the Hotel Villa Margherita.
