Italy: Italian apple strudel
When you think about Italian pastries, apple strudel probably won’t be the first thing that comes to your mind. Bit Italy is also South Tyrol with its amazing mountains and an alpine-Mediterranean cuisine that embraces both classic Italian dishes and South Tyrolean specialities.
The popular strudel even has its own celebration with the “Strudelfest”, a strudel festival in Seis am Schlern, this year held on 9 September. Homemade apple strudel with shortcrust – Recipe by Romantik Hotel Turm
- 250 g flour
- 170 g sugar
- 1 packet vanilla sugar
- Lemon zest
- 170 g cold butter
- 2 egg yolk
Mix all ingredients and knead until smooth, either in a machine or using your hands. Let the dough rest for 2 hours.
- 7 apples
- 100 g raisins
- 20 g pine nuts
- Lemon juice
- Sugar according to taste
- 1 tsp cinnamon
- Bread crumbs
Peel the apples and remove the core. Cut them in thin pieces and mix them with the other ingredients for the filling.
Roll out the dough and put the filing on top. Roll it into the form of a strudel and bake it for about 50 minutes at 180°C.
